Easy Breakfast Casserole using Extra Farm Fresh Duck Eggs
That’s right you heard it! Duck Eggs! There any many positive attributes when utilizing duck eggs over chicken eggs. The most common difference between the two species is the amount of protein in the eggs produced. Duck eggs slightly have a higher amount of protein and extra nutrients than chicken eggs. Duck eggs also produce a more dense, rich, and “fluffy” contribution towards your culinary flavors. So in all, incorporating duck eggs into your daily diet can have its advantages.
On the farm, I tend to have an overabundance of duck eggs that I just don’t know what to do with. I needed to come up with a way to get rid of these in a little amount of time. I found a perfect opportunity to experiment with new recipes!

A breakfast casserole came to mind since the main ingredient is eggs, acting as a binding agent in the recipe. The best part is you use a lot of them!

This recipe is the perfect idea to feed a crowd in the morning! I love how simple and easy it is. Just throw everything together and place it in the oven. Even If I wanted to make it in advance, you can keep it in the fridge overnight and cook it the next morning. How easy is that? I can make my coffee and read a book while it’s baking! Duck Egg Casserole
Equipment
- 1 9 x 13 oven safe dish
Ingredients
- 1 lb ground pork sausage
- 1 chopped red pepper
- 1 medium chopped onion
- 1 cup cottage cheese
- 4 small shredded potatoes
- 3-4 cups fresh spinach leaves
- 8-12 duck eggs
- 1 tsp salt
- 1 tsp pepper
- 1 tsp thyme
- 1 tsp garlic salt
- 1 tsp coconut oil
- 4 cups shredded cheese
Instructions
- Preheated oven to 350 degrees fahrenheit and grease 9 x 13" oven safe dish with coconut oil. Set aside.
- Cook 1 lb of pork sausage until browned. Poor into coated oven safe dish.
- Add chopped red pepper, chopped onion, seasoning, cottage cheese, spinach, and shredded potatoes.
- Whisk duck eggs and pour into oven safe dish mixture. Mix until well combined.
- Finally, layer the top with 4 cups of shredded cheese.
- Cover and refrigerate overnight or cook at 350 degrees fahrenheit for 35-50 minutes. Let set for 5 minutes before serving.
