Instructions
Preheated oven to 350 degrees fahrenheit and grease 9 x 13" oven safe dish with coconut oil. Set aside.
Cook 1 lb of pork sausage until browned. Poor into coated oven safe dish.
Add chopped red pepper, chopped onion, seasoning, cottage cheese, spinach, and shredded potatoes.
Whisk duck eggs and pour into oven safe dish mixture. Mix until well combined.
Finally, layer the top with 4 cups of shredded cheese.
Cover and refrigerate overnight or cook at 350 degrees fahrenheit for 35-50 minutes. Let set for 5 minutes before serving.
